Yields: 1 quart yogurt
Total Time: Up to 3 days for fermentation (10 minute prep time, Up to 3 days for fermentation)
Ingredients:
14oz. can full-fat coconut milk
2 capsules Synbiotic 365
Directions:
Start by sanitizing a medium jar by washing it thoroughly and rinsing with boiling water. Once the jar has cooled, progress with the recipe.
Ensure to select a creamy, smooth coconut milk to make your yogurt with. Shake the can well, then pour it into the sanitized jar. Whisk the coconut milk to combine any separated water, ensuring an even consistency with no lumps.
Whisk the coconut milk together to combine any water that may be separated from the coconut in the can to combine until an even consistency has been achieved and no clubs remain.
After it’s well-mixed, open the Synbiotic 365 capsules and stir the contents into the coconut milk with a wooden spoon until evenly combined. Cover the jar with a cheesecloth and secure it with a rubber band. Place the jar in a warm, dark spot at room temperature, away from direct sunlight, and let it ferment for 24 to 72 hours. The longer it ferments, the tangier it will become.
Once it has reached your preferred level of fermentation, transfer the jar to the refrigerator to stop the fermentation process.
Enjoy your homemade coconut yogurt on its own, or topped off with any of your favorite pairings!
