Beetroot Margarita Mocktail

Beetroot is more than just a colorful root—it's a functional food powerhouse, especially when it comes to gut health. In this Beetroot Margarita Mocktail, we combine nutrition and flavor to support your digestive system, liver, and brain. Beets are rich in fiber, which feeds beneficial gut bacteria and helps regulate digestion. They're also loaded with betalains, compounds known to support liver detoxification, and nitrates, which improve circulation and oxygen delivery for better cognitive and physical performance. 

Serves: 4 Total Time: 10 minutes (10 minute prep time)

Ingredients:

Beetroot Margarita Mocktail: 

2 small beetroots, freshly juiced

1 tbsp raw honey, optional for added sweetness

1 cup lime juice

1 cup sparkling water 

To Serve: 

4 handfuls ice 

Hand-harvested sea salt, to rim

4 Lime wedges

Method:

Juice the beetroots, and blend with all of the remaining ingredients for the mocktail, excluding the sparkling water. 

Rim each mocktail glass, fill with a handful of ice, and pour beetroot margarita mocktail on top, finishing off each glass with a fresh lime wedge.
